Let me start off by saying, I would have better pictures of this masterpiece IF my husband and children hadn't swooped in like vultures and ate them all before I had the opportunity to process what just happened.
So, I stumbled across this recipe when I was looking for chicken recipes...I hate chicken but if you're anything like me, you'll know that it's the cheapest of all proteins (approx. $1.18lb here) and I can get like 6-8 chicken breasts for about $10. Also, if you're anything like me you're busy momma on a budget so you want a recipe that doesn't call for four thousand ingredients that will expire before you'll ever use them again, will make you spend an hour and a half in food preparation, or will cost you your first born child by the time you hit the registers with all your groceries. So, insert: CHICKEN TOSTADAS!
WHAT YOU'LL NEED:
-8 tostada shells (I just used corn tortillas....its cheaper, brushed both sides with olive oil and baked them at 350 in the oven for 4 minutes, flipped, then 4 more minutes, add more time if needed, they need to be hard)
-3 cups shredded chicken (I boil mine and then shred it)
-1.5 cups BBQ sauce (divided. one cup/half cup)
-2 cups of shredded cheese (which ever kind you prefer, I used fiesta)
-green onions as garnish
INSTRUCTIONS:
-Preheat oven to 350 and put shells on two rimmed baking sheets (if you're using corn tortillas, now is the time to bake these, get them ready to go)
-Combine one cup of BBQ sauce and shredded chicken and stir to combine (I used a tad more just because we LOVE BBQ around here)
-Divide the chicken evenly between all the shells and top with approx. 1/4 cup of cheese.
-Bake for 6-8 minutes until the cheese is melted
-Remove from oven and drizzle with remaining 1/4 cup of BBQ and top with green onion if desired.
